FRENCH ONION BRIE DIP
French Onion Brie Dip
Ingredients
8 ounce Brie Wheel
2 small Vidalia Onions, sliced thinly
1 Tsp Fresh Thyme, chopped, plus some for garnish
2 Garlic Cloves, minced
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Butter
¼ c White Wine (use what you like to drink)
½ Tsp Worcestershire Sauce
1 Bay Leaf
1 Tsp Sugar
½ Tsp Salt
¼ Tsp Black Pepper
Directions
Preheat the oven to 350F
In a medium skillet over medium low heat add the butter and olive oil. Once the butter has melted, add in the onions, salt and black pepper and cook until golden brown and caramelized, stirring frequently (about 20 minutes). If the onions are not caramelized turn the heat up to medium and cook for another 5 minutes until golden. Add the thyme and garlic and stir for 30 seconds.
Add the white wine, bay leaf and worcestershire and cook for another 5 minutes until all the liquid is reduced. Set aside.
While the onions are sauteing, with a serrated knife, cut off the top rind of the brie then add to a round baker dish and cook covered with lid or aluminum foil.
Bake with the cover on for 15 minutes until the brie is just starting to get soft.
Top with the caramelized onion mixture and bake with the cover on for about another 5 minutes.
Take out of the oven and garnish with some fresh thyme leaves.
Serve with a few different fun crackers or crostinis.
