New England Lobster Roll
Serves 2
Ingredients
2 c Fresh Lobster Meat cooked, cut into bite size pieces
¼ c Mayonnaise (preferred brand Cains)
1 Tsp Lemon Zest
2 Tbsp Scallions, chopped
¼ Tsp Coarse Kosher Salt
⅛ Tsp Black Pepper
2 Hot Dog Rolls, buttered and toasted
Directions
In a medium sized bowl, add the lobster meat, mayonnaise, lemon zest, scallions, salt and pepper, mix until combined.
Spread butter on rolls and toast in a skillet until golden brown.
Add lobster mixture into the buns. Enjoy!
