New England Lobster Roll

Serves 2

Ingredients

  • 2 c Fresh Lobster Meat cooked, cut into bite size pieces

  • ¼ c Mayonnaise (preferred brand Cains)

  • 1 Tsp Lemon Zest

  • 2 Tbsp Scallions, chopped

  • ¼ Tsp Coarse Kosher Salt

  • ⅛ Tsp Black Pepper

  • 2  Hot Dog Rolls, buttered and toasted

Directions

  1. In a medium sized bowl, add the lobster meat, mayonnaise, lemon zest, scallions,  salt and pepper, mix until combined.

  2. Spread butter on rolls and toast in a skillet until golden brown.

  3. Add lobster mixture into the buns.  Enjoy!
